Waking up with...About that Food

We have spent our Sunday morning with Melina, a former fashion stylist based in Vienna, Austria, that has recently become our favourite go-to-girl when it comes to pure food indulgence without having to feel guilty. On her blog About that Food, Melina whips up the most delicious vegan food.

Lucky for us, she shared her amazing guilt-free waffles recipe for the perfect Sunday breakfast in bed.
Vegan Cinnamon & Oat Waffles - Serves 2

 • 1 1/2 cups oat milk

1 tsp apple cider vinegar 

1/2 c of buckwheat flour 

2 ripe bananas

2 tbsp coconut oil 

1 tbsp baking powder

1 tsp cinnamon

a pinch of nutmeg

a pinch of salt


Start by whisking the oat milk and apple cider vinegar together in a small bowl, set aside for about 10 mins.
Next add the milk/vinegar mixture to a blender together with the oats and pulse a few times. Then add all the remaining ingredients and blend well.
Brush your waffle iron with a little bit of coconut oil and cook your waffles until they are slightly brown and crispy.

P.S.: If you don’t have a waffle iron this recipe also makes for a great pancake batter.
